This is one of those meals that we always have on rotation. Eating a meal more than once is not a common occurrence in my house since I tend to gravitate towards new dishes, or seasonal items. However, cabbage and mangos are available all year long and can be a great cooling dish during the summer or a nice fresh dish during the winter when there is not as much fresh produce available.

If you prep this meal ahead of time is comes together very quickly. I always shred my own cabbage, but you can make it easy on yourself by buying a bag of shredded cabbage. Once you master cutting up a mango, the job will not seem to tedious or feel like at any moment you are going to cut your fingers off.

This is a perfect meal to feed a crowd as well. You can have everything prepped ahead of time and just toss the salad with dressing about 30 minutes before serving. You want all fo those flavors to combine. You could even cook the chicken earlier in the day and bring to room temperature for serving. This combination is perfect with both ingredients at room temperature.

Grilled chicken skewers with mango slaw salad
Easy slaw salad and grilled chicken. Perfect for fall and winter when you need a fresh pick me up, or during the summer when you want a cooling meal.
Ingredients
- Slaw Salad
- 1 head of cabbage shredded or 2 bags of shredded cabbage or coleslaw mix
- 4 carrots shredded
- 10 thai basil leaves, chopped
- 1/2 bunch cilantro, chopped
- 1 bunch scallions, sliced, green parts only
- 1 cucumber, sliced
- 2 mango, diced
- Dressing
- 2 limes
- 4 tablespoon olive oil
- 1 tablespoon rice wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- For the Chicken:
- 3 lbs chicken, halved or cut in strips so skewer
- 3 Tbsp olive oil
- Grated zest from 2 limes
- Juice from 2 limes, about 1/4 cup
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Peanut Dipping Sauce
- 1/4 cup peanut butter
- 1/4 cup coconut milk or water
- 2 tablespoon soy sauce
- 1/2 lime, juiced
- salt
- pepper
- sriracha (as spicy as you want)
Instructions
Slaw salad
Combine cabbage, carrots, basil, cilantro, and cucumber in a big bowl. Combine dressing ingredients in a bowl and whisk Add to cabbage mixture, combine well and set aside for at least 15-20 minutes for flavors can come together. Prior to serving add diced mango.
Grilled Chicken
You can either butterfly your chicken or slice into long thin slices to grill on skewer. Combine all ingredients in a shallow dish and marinade for 30 minutes up to two hours. If grilling on a skewer, don't forget to soak your wood if that is what you are using so it doesn't catch on fire. Then skewer it after you have marinaded the meat.
Peanut Sauce
Whisk ingredients in a bowl. Season and taste depending on your preferences. You can add more sriracha as needed. If you don't like coconut feel free to use water or water and more lime juice.
