Did you grow up eating beets? Maybe those canned tin tasting ones? Boiled to death? I remember trying to slather on butter as a kid to make them taste better. These beets with yogurt and candied almonds will blow your Grandpa’s socks off. Even better, you might actually be able to get your kids to eat their beets. That is a huge win in my book!
I think it’s time you give cooking beets a try at home. The method is quite simple. Take a look at my video if you don’t know how to cook them. After that, head to store or farmers market buy a couple beets, wash, cook, peel, slice, and toss with some olive oil, vinegar, salt, and pepper. Already that is much, much better than your Grandparent’s beets.
This recipe can be used with either red or yellow beets. Your choice, but red are much more readily accessible. Just try to buy them about the same size, firm, and either with or without the tops.
Thankfully this recipe is super simple. All you need is some plain yogurt, I like using full fat since it has more flavor. As far as nuts, you can use almonds, macadamia, pecan, peanuts. Your choice. If you don’t know how to candy nuts, take a look here.
- 4 whole beets, cooked
- 1/2 cup whole milk yogurt, or greek yogurt thinned
- 1 lemon, zested and juiced
- 1/4 bunch parsley
- olive oil
- red pepper flakes
- salt and pepper
1. Cook beets using preferred method. Cool, peel, and slice.
2. Toss beets with 1/2 lemon, juiced, olive oil, salt, and pepper. Set aside
3. Place beets on a platter, dollop yogurt on top of beets. Top with lemon zest, chili flakes to taste, parsley, salt, pepper, and olive oil.
If you can handle a little heat, don't skimp on the chili flakes. It really makes the dish!
You can also replace the lime juice for lemon and cilantro for parsley. Mint, dill or basil would be a great addition as well.

This salad, Beets With Yogurt and Candied Almonds, will feel like a meal on its own. Serve with some extra yogurt for more protein or some grilled chicken. It would also be perfect over arugula or butter lettuce.
