I have been using millet for almost a couple of years. I feel like it has been our secret grain, I just haven’t shared it with many people. It is a fantastic mild, slight corn flavored grain, gluten free, and has a plethora of health benefits. I don’t worry about the exact micronutrients of my food but I know that millet is a great wholesome, gluten free grain, and most important it tastes fantastic. My kids love it! Millet holds up well in the fridge so I can make a big batch and reheat it the next day on the stove with a bit of water or milk and breakfast is done. Treat it just like your oatmeal and can be topped with anything you like. It is also great for savory dishes, or as a substitute for quinoa or rice.
I buy the Bob’s Red Mill brand of millet from Amazon. Millet can be used for a bunch of dishes, especially when you need a gluten free gain. I have a whole bunch of recipes I need to share including one of my favorites is millet tabbouleh.
