Meal 1: Spaghetti (spaghetti squash) and meat/lentil sauce with Italian salad

Lunch Ideas:
- Take leftovers from the night before.
- Make a couple days worth of egg roll salad. Poach some chicken to go with it.
- Make extra of day 2. Serve on top of spinach with maple vinaigrette
Tips for easier cooking :
Meal 1: We love this meal in our house because it is super simple. We just use a jar of the Aldi marinara to make it even easier. Our choice of meat is lean ground beef but you could cook lentils as well. Serve with pasta of choice and cooked spaghetti squash. I love this salad and vinaigrette from Once Upon a Chef.
Meal 2: Place squash, carrots, and onions on one tray. Roast at 400 degrees until done. You can add the sausage to the same tray as long as you don’t overcrowd the vegetables. Or roast on another tray or grill. Enjoy by itself, or over some grains or greens like spinach with a maple vinaigrette.
Meal 3: Quiche can be baked ahead of time. Or make it as a crustless quiche, in a glass baking dish. Serve with a green salad, roast potatoes, and dijon vinaigrette.
Meal 4: This is a great date night meal! Serve your kids something easy and spend sometime with your loved one or yourself. If you drink wine, I have a recommendation from a good friend who is a sommelier – Sonoma-Cutrer, Russian River Ranches Chardonnay. It cost about $20-25 in the store.
Meal 5: Super simple one pot dinner. I make a couple versions of this but this one is super simple – Rotisserie chicken shredded, can corn, can black beans, jar of salsa, chicken broth, lime, and chili powder, then simmer! That simple. Top with tortilla chips, cheese, salsa, and avocado.
