My kids can eat about 4 of these paleo chicken parmesan cutlets. They are a fantastic alternative to traditional breaded chicken cutlets. They bake up nice and crisp, hold the sauce well, and even reheat great the next day. If you wanted them crispier you could fry them first in a cast iron skillet and then transfer to the oven. I would recommend making a double batch, since the breading process takes a little while so you have plenty of extras to use the next day for lunch or dinner.
