Apple Walnut Millet Oatmeal

A wonderful gluten free millet porridge recipe.
  • 2 cups millet
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ½ tablespoon honey
  • 1 tablespoon butter
  • Sautéed apples
  • 3 green apples - peeled, diced ½ inch
  • 2 teaspoon honey
  • 1 tablespoon butter
  • pinch cinnamon
  • toasted walnuts
  1. Heat a large pot over medium heat and add the millet. Toast millet for 4-5 minutes stirring often, watching closely so it does not burn, until golden and toasted. Add 6 cups of water, cinnamon, salt, honey, and 1 tablespoon of butter. Careful, the pan is hot and water will splatter. Bring to a boil, reduce, and cook for about 20-30 minutes. Stirring often. If it becomes too dry just add more water. Start checking texture toward the end. Millet will be soft but with a delicate crunch, if it needs to be cooked longer, just add more water if needed and cook for a bit longer.
  2. For the apples: Heat a sauté pan over medium heat, add butter and apples. Sauté for 5 minutes, until soft. Add honey and cinnamon at the end and stir well.
  3. Spoon millet into bowls, tops with sautéed apples, toasted walnuts, and honey if desired. Enjoy!
